The objective of Slow Food presidia is to safeguard biodiversity, improve the sustainability of production, strengthen the social role and identity of producers. The soup of principals is composed of legumes from various Italian production areas. After a long research work we have managed to obtain a soup that highlights the qualities of these extraordinary products
Ingredients: beans from Controne (SA), red beans from Lucca (LU), lentils from Villalba (CL), chickpeas from Cicerale (SA), grass peas from Serra De Cunti (AN)
Method of preparation: rinse the product with running water. Soak for 6/8 hours
