The Red Mullet of Licosa is fished in the stretch of water between Ogliastro Marina and Punta Licosa, in the Marine Protected Area of Santa Maria di Castellabate, it is a reef Mullet, not mud mullet, with hints of sea grass precisely because it is reef.
The Mullet, since ancient times, has been known not only for its delicacy but also for its eroticizing properties to the point of removing all inhibition of its rosy flesh and scent.

We have drawn on our tradition to develop the perfect recipe for preserving the Licosa Redfish by making a very delicate marinade in apple vinegar.

Ingredients:

– Trapani natural sea salt;
– Apple Vinegar;
– Olive Oil.
